- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 2 cups powdered sugar
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- In another bowl, beat the butter with the brown sugar and granulated sugar until creamy.
- Add the egg, apple cider, and vanilla extract; mix well.
- Gradually add the dry ingredients to the wet ingredients.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until set, then cool.
- For the filling, beat together the cream cheese and powdered sugar until smooth.
- Spread the filling on the flat side of half the cookies and sandwich with the remaining cookies.
