  • 1 cup brown sugar, packed

  • 1 cup apple cider

  • 1 cup cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat the butter with the brown sugar and granulated sugar until creamy.
  4. Add the egg, apple cider, and vanilla extract; mix well.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes until set, then cool.
  8. For the filling, beat together the cream cheese and powdered sugar until smooth.
  9. Spread the filling on the flat side of half the cookies and sandwich with the remaining cookies.
