  • 1 cup apple cider
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together brown sugar and butter until light and fluffy.
  4. Add apple cider, egg, and vanilla to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until set.
  8. Let cookies cool completely.
  9. In a separate bowl, beat together cream cheese, powdered sugar, and maple syrup until smooth.
  10. Spread or pipe the filling onto the flat side of half the cookies and sandwich with the remaining cookies.
