- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup apple cider
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons maple syrup
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream together brown sugar and butter until light and fluffy.
- Add apple cider, egg, and vanilla to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until set.
- Let cookies cool completely.
- In a separate bowl, beat together cream cheese, powdered sugar, and maple syrup until smooth.
- Spread or pipe the filling onto the flat side of half the cookies and sandwich with the remaining cookies.
