Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, beat together the granulated sugar, brown sugar, and butter until light and fluffy.
  4. Add the eggs, pumpkin puree, and vanilla to the sugar mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the oats and nuts if using.
  7. Spread the batter evenly into the prepared pan.
  8. To make the crumble, combine the remaining oats, butter, flour, and sugars in a bowl until crumbly, then sprinkle over the cake batter.
  9. Bake for 35-40 minutes or until a toothpick comes out clean.
  10. Allow to cool before slicing and serving.
