  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and milk.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill each cupcake liner about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely.
  10. In a separate bowl, whip the heavy cream until stiff peaks form.
  11. Cut a small hole in the center of each cupcake and fill with whipped cream.
  12. Melt the chocolate chips and pour over the cupcakes to create a ganache top.
