  • 2 cups pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon bourbon
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and place it in a 9-inch pie plate.
  3. In a large mixing bowl, combine pumpkin puree, heavy cream, brown sugar, granulated sugar, eggs, bourbon, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until smooth.
  4. Pour the pumpkin filling into the prepared pie crust.
  5. Bake for 50-60 minutes or until the filling is set.
  6. Remove from the oven and let it cool slightly before chilling in the refrigerator.
  7. Before serving, sprinkle the top with granulated sugar and use a kitchen torch to brûlée the sugar until caramelized.
