- 2 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt to taste
- Black pepper to taste
- Rinse the red lentils under cold water until the water runs clear.
- In a large pot, sauté the onion and garlic until soft.
- Add the chopped carrots and continue to sauté for a few more minutes.
