Carrot and Red Lentil Soup

Ingredients

  • 1 cup red lentils
  • 2 cups carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a large pot, sauté the onion and garlic until soft.
  3. Add the chopped carrots and continue to sauté for a few more minutes.
  4. Stir in the cumin and turmeric, cooking for an additional minute.
  5. Add the rinsed lentils and vegetable broth, bringing to a boil.
  6. Reduce heat and let simmer for 20-25 minutes until lentils are soft.
  7. Use an immersion blender to puree the soup to your desired consistency.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with fresh herbs if desired.
