Instructions

  1. Preheat the oven to 350°F (175°C).

  3. In another bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  4. Add the egg and vanilla extract, mixing well.
  5. Gradually blend in the dry ingredients, then fold in the grated carrots, raisins, and walnuts.
  6. Drop spoonfuls of dough onto a baking sheet.
