Cattle Drive Casserole

  • 6 slices turkey bacon
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups frozen mixed vegetables
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 2 cups cooked egg noodles
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  3. Add ground turkey, onion, garlic, and bell pepper to the skillet. Cook until the turkey is no longer pink.
  4. Stir in the frozen mixed vegetables and cream of mushroom soup. Mix well.
  5. In a large bowl, combine the turkey mixture, crumbled bacon, cheddar cheese, cooked noodles, paprika, salt, and pepper.
  6. Transfer everything to a greased baking dish and bake for 25-30 minutes or until heated through and bubbly.
