Instructions

  2. In a skillet, melt butter over medium heat.
  3. Pour the eggs into the skillet, scrambling until just set.
  4. Place one tortilla in the skillet, sprinkle half of the cheese, then add the scrambled eggs, and top with the remaining cheese.
  5. Cover with the other tortilla and cook until golden brown, flip and cook the other side.
  6. Remove from heat, slice, and serve warm.
