  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of cupcake liners in a muffin tin.
  3. In another bowl, beat together cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crusts in the muffin tin.
  5. Bake for 20-25 minutes or until set. Let cool completely.
  6. Top each cupcake with cherry pie filling before serving.
