- 4 cups fresh cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 teaspoon cinnamon
- 1 ½ cups all-purpose flour
- ½ cup packed brown sugar
- ½ cup unsalted butter, melted
- ½ teaspoon salt
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla, almond extract, and cinnamon. Set aside.
- In another bowl, mix flour, brown sugar, melted butter, and salt until crumbly.
- Place half of the crumb mixture in the bottom of a pie dish. Add the cherry mixture on top, then sprinkle the remaining crumb mixture over the cherries.
- Bake for 40-45 minutes or until the topping is golden and the cherries are bubbling.
- Let cool before serving.
