  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon cinnamon
  • 1 ½ cups all-purpose flour
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, melted
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla, almond extract, and cinnamon. Set aside.
  3. In another bowl, mix flour, brown sugar, melted butter, and salt until crumbly.
  4. Place half of the crumb mixture in the bottom of a pie dish. Add the cherry mixture on top, then sprinkle the remaining crumb mixture over the cherries.
  5. Bake for 40-45 minutes or until the topping is golden and the cherries are bubbling.
  6. Let cool before serving.
