Chicken Burrito Casserole

This Chicken Burrito Casserole is a delicious and easy-to-make dish that the whole family will enjoy.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 8 burrito-sized flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, and chili powder.
  3. Layer a few tortillas at the bottom of a greased baking dish.
  4. Spread half of the chicken mixture over the tortillas.
  5. Add a layer of cheese, followed by another layer of tortillas.
  6. Repeat until all ingredients are used, finishing with cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, until cheese is bubbly and golden.
  8. Remove from oven and let cool for a few minutes before serving.

Notes

  • For extra flavor, add diced bell peppers or jalapeños to the filling.
  • This casserole can be made a day in advance, just cover and refrigerate before baking.
