- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon chili powder
- 8 burrito-sized flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, and chili powder.
- Layer a few tortillas at the bottom of a greased baking dish.
- Spread half of the chicken mixture over the tortillas.
- Add a layer of cheese, followed by another layer of tortillas.
- Repeat until all ingredients are used, finishing with cheese on top.
