- 2 cups butternut squash, diced
- 2 cups leeks, sliced
- 1.5 pounds boneless chicken thighs
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 cup chicken broth
