  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup green peas
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pie crust

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté onions and garlic until translucent.
  4. Add chicken, carrots, peas, and potatoes, cooking until the chicken is no longer pink.
  5. Stir in flour and cook for 1 minute. Gradually add chicken broth and milk, stirring until thickened.
  6. Add thyme, salt, pepper, and the cooked turkey bacon back into the mixture. Mix well.
  7. Pour the mixture into a pie crust, then cover with another crust.
  8. Cut slits in the top crust to allow steam to escape.
  9. Bake for 30-35 minutes or until golden brown.

Notes

  • Let the pot pie rest for 10 minutes before serving.
  • Feel free to add more vegetables based on your preference.
