  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
  4. Combine the wet and dry ingredients until just combined, being careful not to overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. In a small bowl, mix together the cinnamon and sugar for the topping, then sprinkle it evenly over the muffins.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool slightly before removing from the tin.
