Cottage Cheese and Spinach Crustless Quiche

A delicious twist on the classic quiche, this Cottage Cheese and Spinach version is easy to make and packed with flavor!

Ingredients

  • 2 cups fresh spinach
  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the onion until translucent. Add spinach and cook until wilted.
  3. In a bowl, mix cottage cheese, eggs, and spices.
  4. Add sautéed spinach and onion mixture to the bowl and stir until combined.
  5. Pour into a greased pie dish and sprinkle with shredded cheese.
  6. Bake for 30-35 minutes until the center is set and golden.
  7. Let cool for a few minutes before slicing.
