Cozy Autumn Wild Rice Soup

  • 1 cup wild rice
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup mushrooms, sliced
  • 2 cups spinach, chopped

Instructions

  1. In a pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add olive oil, onion, carrots, and celery. Sauté until soft.
  3. Add wild rice, chicken broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 45 minutes.
  5. Add mushrooms and spinach. Cook for an additional 10 minutes.
  6. Stir in the chopped turkey bacon before serving.

Notes

  • For a creamier soup, consider adding a splash of cream before serving.
