Cranberry-Orange Curd Tart

  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup fresh orange juice
  • 1 tbsp orange zest
  • 1/4 cup unsalted butter
  • 1 pre-baked tart shell

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine cranberries and sugar over medium heat until cranberries burst.
  3. In a bowl, whisk together eggs, orange juice, and zest.
  4. Mix the cranberry mixture into the egg mixture and strain into a saucepan.
  5. Cook over low heat, stirring constantly, until thickened.
  6. Remove from heat and stir in butter until melted.
  7. Pour the curd into the pre-baked tart shell.
  8. Bake in the oven for 15 minutes.
  9. Allow to cool before serving.
