Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 6 cups chicken broth
  • 1 cup uncooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; sauté until vegetables are tender.
  3. Stir in garlic, thyme, and basil; cook for another minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in rice and reduce heat; simmer until rice is cooked.
  6. Add shredded chicken and heavy cream; stir well.
