- 2 pounds baby Yukon gold potatoes
- 1/4 cup Dijon mustard
- 1/2 cup heavy cream
- 4 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together Dijon mustard, heavy cream, olive oil, garlic powder, onion powder, salt, and pepper.
- Cut the baby potatoes in halves or quarters depending on their size and add them to the bowl, tossing to coat.
- Spread the potatoes on a baking sheet and cook in the oven for 25 minutes.
- Meanwhile, cook the turkey bacon in a skillet until crispy, then chop it into small pieces.
- After 25 minutes, remove the potatoes from the oven, sprinkle the turkey bacon on top, and return to the oven for an additional 10-15 minutes until potatoes are golden brown.
