Creamy Mustard Roasted Potatoes

Deliciously creamy and flavorful, these roasted potatoes combine the tang of mustard with the savory crunch of turkey bacon.

  • 2 pounds baby Yukon gold potatoes
  • 1/4 cup Dijon mustard
  • 1/2 cup heavy cream
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together Dijon mustard, heavy cream, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Cut the baby potatoes in halves or quarters depending on their size and add them to the bowl, tossing to coat.
  4. Spread the potatoes on a baking sheet and cook in the oven for 25 minutes.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop it into small pieces.
  6. After 25 minutes, remove the potatoes from the oven, sprinkle the turkey bacon on top, and return to the oven for an additional 10-15 minutes until potatoes are golden brown.
  7. Serve warm and enjoy!
