Creamy Pumpkin Ricotta Stuffed Shells

  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup pumpkin puree
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions; drain and set aside.
  3. In a bowl, mix together the ricotta cheese, pumpkin puree, garlic powder, nutmeg, salt, pepper, and Parmesan cheese.
  4. Fill each pasta shell with the pumpkin ricotta mixture.
  5. Spread 1 cup of marinara sauce in the bottom of a baking dish.
  6. Arrange the stuffed shells in the dish and top with the remaining marinara sauce.
  7. Bake for 25-30 minutes or until heated through.
  8. Garnish with fresh basil before serving.
