Creamy Sauerkraut Soup with Sausage and Potatoes

A deliciously creamy soup that combines sauerkraut, sausage, and potatoes for a comforting meal.

  • 1 tablespoon olive oil
  • 1 pound sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups sauerkraut, drained
  • 2 potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the drained sauerkraut and diced potatoes. Reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream and caraway seeds. Season with salt and pepper, and heat through before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • For a spicier version, use spicy sausage.
