- 12 lasagna noodles
- 2 cups ricotta cheese
- 3 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 3 cups marinara sauce
- 1 egg
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic and mushrooms until golden.
- In a bowl, mix ricotta cheese, spinach, egg, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce in a baking dish.
- Layer 4 lasagna noodles on the sauce, followed by half of the ricotta mixture, half of the sautéed mushrooms, and a layer of mozzarella.
- Repeat the layering process and top with remaining marinara sauce and parmesan cheese.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes until bubbly.
- Let cool for 10 minutes before slicing and serving.
