  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder

  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into thin rounds.
  3. In one bowl, whisk the eggs. In another bowl, combine the Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each zucchini slice in the egg, then in the breadcrumb mixture, making sure to coat well.
  5. Arrange the coated zucchini on a baking sheet lined with parchment paper.
  6. Bake for about 20 minutes, or until golden brown and crispy.
