  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups egg noodles
  • 1 cup frozen peas

Instructions

  1. Place the chicken, broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper in the crockpot.
  2. Cook on low for 6-8 hours or high for 4-5 hours until the chicken is fully cooked.
  3. Remove the chicken, shred it, and return it to the soup.
  4. Add the egg noodles and frozen peas, and cook for an additional 20-30 minutes until the noodles are tender.
