  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 1 teaspoon peppermint extract
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter; press into the bottom of a tart pan.
  3. Bake the crust for 10 minutes and let it cool.
  4. In a saucepan, heat the heavy cream until simmering; remove from heat and add the chopped dark chocolate, stirring until smooth.
  5. Whisk together the eggs, sugar, and salt in a bowl; slowly add the chocolate mixture, stirring constantly.
  6. Stir in the peppermint extract.
  7. Pour the filling into the cooled crust and bake for another 25 minutes.
  8. Let the tart cool completely before refrigerating for at least 2 hours.
