  • 2 large eggs

  • 1 cup chopped apples
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix dry ingredients together, including flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine the wet ingredients: applesauce, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped apples.
  6. Divide the batter into the prepared muffin tin.
  7. In a small bowl, mix oats, brown sugar, and butter, and sprinkle over the muffins.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
