Instructions

  1. In a mixing bowl, mash the ripe banana.
  2. In another bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In a third bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients with the mashed banana until just mixed.
  5. Heat a non-stick skillet over medium heat and pour batter for pancakes.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Meanwhile, cook turkey bacon in another pan until crispy.
  8. Serve pancakes warm with turkey bacon on the side.
