Easy Chipotle Chicken Salad

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle in adobo sauce, minced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, corn, black beans, bell pepper, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, chipotle in adobo, garlic powder, salt, and pepper.
