Easy Crockpot Potato Soup with Hash Browns

  • 30 ounces frozen hash browns
  • 4 cups vegetable broth
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a crockpot, combine the frozen hash browns, vegetable broth, diced onion, celery, carrots, garlic powder, and onion powder.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese.
  4. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, you can mash some of the potatoes using a potato masher.
