Easy Homemade Roasted Tomato Soup

A delicious and easy roasted tomato soup recipe that features turkey bacon for an extra layer of flavor.

  • 2 pounds fresh tomatoes
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Bake the tomatoes for 25-30 minutes until caramelized.
  4. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  5. In the same pot, sauté onion and garlic until translucent.
  6. Add the roasted tomatoes, broth, and basil. Simmer for 15 minutes.
  7. Blend the soup until smooth, then serve topped with chopped turkey bacon.
