Espresso Date Cake with Walnuts

  • 1/2 cup walnuts, chopped
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brewed espresso

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the dates and espresso and let them soak for about 10 minutes.
  3. In another bowl, cream together the butter and sugars until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the date and espresso mixture.
  7. Fold in the chopped walnuts.
  8. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
