- 4 slices turkey bacon
- 1 pound boneless chicken thighs
- 2 cups chicken broth
- 1 cup broccoli florets
- 1 cup bell peppers, chopped
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- In a large pot, heat the vegetable oil over medium heat.
- Add the turkey bacon and cook until crispy. Remove and chop.
- In the same pot, add minced garlic and grated ginger, sauté until fragrant.
- Add chicken thighs and cook until browned on all sides.
- Pour in chicken broth, soy sauce, and hoisin sauce. Stir well.
- Add broccoli and bell peppers, then simmer for 15 minutes.
- Mix cornstarch with water to create a slurry, then stir into the stew to thicken.
- Return chopped bacon to the pot, stir, and serve hot.
