- 1 cup arborio rice
- 4 cups chicken stock
- 1 pound shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt to taste
- Pepper to taste
- Heat the chicken stock in a saucepan over medium heat.
- In a separate pan, heat the olive oil and butter, then add the onion and garlic, sautéing until soft.
- Add the arborio rice to the pan, stirring for 2–3 minutes until the rice is translucent.
- Pour in the white wine, stirring until it has mostly evaporated.
- Gradually add the warm chicken stock, one ladle at a time, stirring frequently and allowing the liquid to absorb.
- Once the risotto is creamy and al dente, add the shrimp and cook until they turn pink.
- Stir in the Parmesan cheese, seasoning with salt and pepper to taste. Serve hot.
Notes
- For a richer flavor, add more Parmesan cheese.
