Greek Chicken Meatballs with Lemon Orzo

A delicious and easy recipe for Greek chicken meatballs served with lemon orzo.

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, feta, garlic, oregano, salt, pepper, and egg. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs until browned on all sides and cooked through, about 10 minutes.
  4. While the meatballs are cooking, bring chicken broth to a boil in a separate pot. Add orzo and cook according to package instructions.
  5. Once the orzo is cooked, drain and return to the pot. Stir in lemon zest and juice, and season with salt and pepper to taste.
  6. Serve the meatballs on a bed of lemon orzo, garnished with chopped parsley.

Notes

  • Feel free to substitute ground turkey for a lighter option.
  • Add more lemon juice for extra flavor.
