- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- In a large mixing bowl, combine ground chicken, breadcrumbs, feta, garlic, oregano, salt, pepper, and egg. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Cook the meatballs until browned on all sides and cooked through, about 10 minutes.
- While the meatballs are cooking, bring chicken broth to a boil in a separate pot. Add orzo and cook according to package instructions.
- Once the orzo is cooked, drain and return to the pot. Stir in lemon zest and juice, and season with salt and pepper to taste.
- Serve the meatballs on a bed of lemon orzo, garnished with chopped parsley.
