Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1 cup corn, cooked
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro

Instructions

  1. In a bowl, toss the shrimp with olive oil, garlic powder, paprika, and salt.
  2. Grill shrimp over medium heat for about 2-3 minutes on each side until opaque.
  3. In a separate bowl, mix diced avocado, corn, lime juice, and cilantro to make the salsa.
  4. In another bowl, combine sour cream and lime juice to create the creamy sauce.
  5. Assemble the bowl by placing grilled shrimp on a bed of rice, then topping with avocado corn salsa and drizzle the creamy sauce on top.

Notes

  • For added flavor, marinate the shrimp for 30 minutes before grilling.
