- 1 cup pumpkin puree
- 1 cup low-fat cream cheese
- 1/2 cup Greek yogurt
- 1/2 cup honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the graham cracker crumbs and melted butter, then press the mixture into the bottom of muffin tins to create a crust.
- In another bowl, combine the pumpkin puree, cream cheese, Greek yogurt, honey, eggs, vanilla extract, pumpkin pie spice, and salt. Blend until smooth.
- Pour the pumpkin mixture over the crusts in the muffin tins.
- Bake for approximately 25 minutes or until the centers are set.
- Allow to cool completely before removing from the tins.
