Hearty Tuscan White Bean Soup

A warm and comforting soup that combines hearty white beans with the savory flavor of turkey bacon, perfect for chilly days.

Ingredients

  • 1 pound white beans
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and add turkey bacon. Cook until crispy, then remove and chop.
  2. Add onions and garlic to the pot, sauté until translucent.
  3. Stir in the vegetable broth, white beans, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Add kale and chopped bacon back to the pot, cook for an additional 10 minutes. Serve warm.
