Instant Pot Olive Garden Zuppa Toscana Copycat

This is a delicious copycat recipe for Olive Garden’s Zuppa Toscana using an Instant Pot.

Ingredients

  • 4 slices turkey bacon
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 large potatoes, sliced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In the Instant Pot, cook the turkey bacon on the sauté mode until crispy. Remove and set aside.
  2. In the remaining drippings, add sausage and cook until browned.
  3. Add onions and garlic; sauté until translucent.
  4. Stir in potatoes, chicken broth, red pepper flakes, salt, and pepper.
  5. Close the lid, set to manual high pressure for 10 minutes.
  6. When done, release the pressure and add kale and heavy cream.
  7. Crumble the cooked turkey bacon and stir into the soup.
  8. Serve hot and enjoy!

Notes

  • This soup is best served fresh but can be reheated.
  • Adjust the spiciness by changing the amount of red pepper flakes.
