  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 cup spinach, fresh
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup whole wheat pasta

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble when cool.
  2. Add the onion and garlic to the pot, sauté until translucent.
  3. Pour in the chicken broth and add the carrots, celery, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add the spinach, crumbled bacon, pasta, bay leaf, salt, and pepper. Cook until pasta is tender, about 10 minutes.
  6. Remove the bay leaf before serving.

Notes

  • For added flavor, you can include other vegetables like peas or bell peppers.
  • This soup can be served with crusty bread for dipping.
