Italian Rice Casserole (Arancini Casserole)

A delightful and comforting dish, Italian Rice Casserole, also known as Arancini Casserole, is perfect for any gathering.

  • 4 cups vegetable broth
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 large eggs
  • 1 cup frozen peas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pot, bring the vegetable broth to a boil and stir in the Arborio rice.
  3. Reduce heat, cover, and simmer for 20 minutes, or until the rice is tender and the broth is absorbed.
  4. In a large bowl, combine the cooked rice, mozzarella cheese, Parmesan cheese, eggs, peas, garlic powder, onion powder, salt, and pepper.
  5. Mix well until all ingredients are incorporated.
  6. Spread the mixture evenly in a greased baking dish.
  7. Bake for 30 minutes or until the top is golden and crispy.
  8. Let cool for 10 minutes before serving.
