  • 4 slices turkey bacon
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14 ounces) diced tomatoes
  • 4 large eggs
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Instructions

  1. In a large pan, cook the turkey bacon until crispy, then remove and set aside.
  2. Add the onion and bell pepper to the pan and sauté until softened.
  3. Stir in the garlic, cumin, and paprika, cooking for an additional minute.
  4. Add the diced tomatoes and simmer for about 10 minutes.
  5. Make small wells in the sauce and crack an egg into each well.
  6. Cover the pan and cook until the eggs are just set.
  7. Return the turkey bacon to the pan and season with salt and pepper.
  8. Garnish with fresh parsley before serving.
