4 large eggs
1 cup plain yogurt
2 tablespoons unsalted butter
2 tablespoons olive oil
1 teaspoon paprika
1 pinch salt
1 pinch black pepper
2 slices turkey bacon, chopped
Instructions
In a pot of boiling water, poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny.
In a small saucepan, melt the butter and olive oil over medium heat, then stir in the paprika and cook for 1 minute.
In a bowl, serve the yogurt, and gently place the poached eggs on top.
Drizzle the butter sauce over the eggs and yogurt mixture.
Season with salt and pepper, then sprinkle the chopped turkey bacon on top.
Serve immediately with crusty bread.
Notes
For a spicy kick, add a pinch of cayenne pepper to the butter sauce.
Feel free to substitute regular bacon for turkey bacon if preferred.
