Lemon Crinkle Cookies

  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together sugar and butter until light and fluffy.
  4. Add the egg, lemon juice, lemon zest, and vanilla to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Chill the dough for at least 30 minutes.
  7. Roll the chilled dough into balls and roll them in powdered sugar.
  8. Place on a baking sheet and bake for 10-12 minutes.
  9. Allow to cool on a wire rack before serving.
