  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the sugar and butter until light and fluffy.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract, and mix well.
  5. Gradually add the dry ingredients to the wet mixture, blending until just combined.
  6. Chill the dough for about 30 minutes.
  7. Roll the dough into balls, then roll each ball in powdered sugar.
  8. Place on a baking sheet and bake for 10-12 minutes.
  9. Allow to cool on a wire rack.

Notes

  • For extra lemon flavor, increase the lemon zest.
