  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup heavy cream
  • 1 cup pesto sauce
  • 12 ounces pasta of choice
  • 4 medium potatoes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper.
  3. Grill chicken for 6-7 minutes on each side, or until cooked through.
  4. In a pot, cook pasta according to package instructions.
  5. Meanwhile, in a saucepan, heat heavy cream and stir in pesto sauce until combined.
  6. Once pasta is cooked, drain and mix with the creamy pesto sauce.
  7. For roasted potatoes, chop them into wedges, season with olive oil, salt, and pepper, and roast in the oven at 400°F for 30-35 minutes.
  8. Serve the grilled chicken on a plate with a side of creamy pesto pasta and roasted potatoes.
