- 4 chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces penne pasta
- 1 cup pesto sauce
- 1/2 cup heavy cream
- 4 medium potatoes, diced
- 1 teaspoon paprika
- Marinate chicken with olive oil, oregano, basil, garlic powder, salt, and pepper for at least 30 minutes.
- Preheat the grill and cook chicken until no longer pink, about 6-7 minutes per side.
- Boil pasta according to package instructions and drain.
- In a saucepan, combine pesto and heavy cream over medium heat. Stir in the cooked pasta.
- In another pan, toss diced potatoes with olive oil, paprika, salt, and roast in the oven until golden brown.
- Serve chicken on a bed of pesto pasta with roasted potatoes on the side.
