Loaded Herb Grilled Chicken with Creamy Pesto Pasta & Roasted Potatoes

Deliciously loaded with herbs, this grilled chicken paired with creamy pesto pasta and roasted potatoes is a perfect indulgent meal.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces penne pasta
  • 1 cup pesto sauce
  • 1/2 cup heavy cream
  • 4 medium potatoes, diced
  • 1 teaspoon paprika

Instructions

  1. Marinate chicken with olive oil, oregano, basil, garlic powder, salt, and pepper for at least 30 minutes.
  2. Preheat the grill and cook chicken until no longer pink, about 6-7 minutes per side.
  3. Boil pasta according to package instructions and drain.
  4. In a saucepan, combine pesto and heavy cream over medium heat. Stir in the cooked pasta.
  5. In another pan, toss diced potatoes with olive oil, paprika, salt, and roast in the oven until golden brown.
  6. Serve chicken on a bed of pesto pasta with roasted potatoes on the side.

Notes

  • Adjust the creaminess of the pasta by adding more or less cream as desired.
