Low Carb White Chicken Chili (Gluten Free)

  • 1 pound chicken breast, cooked and shredded
  • 2 cups vegetable broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the cooked chicken, vegetable broth, white beans, green chilies, cumin, chili powder, oregano, and season with salt and pepper.
  3. Bring to a simmer and cook for 20 minutes.
  4. Stir in the heavy cream and cook for an additional 10 minutes.
