Mango and Dragon Fruit Chia Pudding

A delicious and refreshing chia pudding made with mango and dragon fruit, perfect for a healthy breakfast or dessert.

Ingredients

  • 2 cups coconut milk
  • 1 cup mango, pureed
  • 1 cup dragon fruit, diced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together chia seeds, coconut milk, honey or maple syrup, and vanilla extract.
  2. Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight.
  4. Once the pudding has thickened, layer it in serving cups with mango puree and diced dragon fruit.
  5. Serve chilled and enjoy!
