Mini Apple Pies

These mini apple pies are the perfect sweet treat for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 4 apples, peeled, cored, and sliced
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, salt, and sugar.
  3. Add the butter and mix until the mixture resembles coarse crumbs.
  4. Stir in enough ice water to form a ball.
  5. Roll out the dough and cut into circles.
  6. Place the circles into muffin tins.
  7. In another bowl, mix sliced apples, brown sugar, cinnamon, and lemon juice.
  8. Spoon the apple mixture into the pastry-lined muffins.
  9. Bake for about 20 minutes or until the crust is golden brown.
